  • 1 (15-Ounce) can garbanzo beans (chickpeas), drained and rinsed with cold water
  • 1 Small cucumber, diced (about 1 cup)
  • 1 Cup cherry or grape tomatoes, halved
  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar or fresh lemon juice
  • 1 Tsp dried oregano
  • 1⁄2 Tsp salt
  • Optional: Feta cheese, black olives


Step 1

Put all the ingredients in the bowl and stir well.

Step 2

Now taste the salad. Does it need more vinegar or lemon juice or a pinch more salt? If so, add it and taste again.

Step 3

Refrigerate for 1-24 hours to allow flavors to blend before serving.
