Ingredient
- 1 (15-Ounce) can garbanzo beans (chickpeas), drained and rinsed with cold water
- 1 Small cucumber, diced (about 1 cup)
- 1 Cup cherry or grape tomatoes, halved
- 2 Tbsp olive oil
- 1 Tbsp red wine vinegar or fresh lemon juice
- 1 Tsp dried oregano
- 1⁄2 Tsp salt
- Optional: Feta cheese, black olives
Directions
Step 1
Put all the ingredients in the bowl and stir well.
Step 2
Now taste the salad. Does it need more vinegar or lemon juice or a pinch more salt? If so, add it and taste again.
Step 3
Refrigerate for 1-24 hours to allow flavors to blend before serving.
